# Directions:
- Preheat oven to 350°F. Grease and flour two 8-inch round cake pans. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. In a separate large bowl, beat granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth. Stir in the dry ingredients until just combined, then fold in grated carrots, nuts, and raisins.
- Divide the batter between prepared pans. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Cool cakes in pans for 10 minutes, then turn out onto a rack and cool completely.
- Beat softened cream cheese and butter until creamy. Gradually add sifted powdered sugar and vanilla extract, beating until smooth and light.
- Spread frosting between cooled cake layers and over the top and sides. Decorate with marzipan carrots or toasted nuts as desired.
- Preheat oven to 250°F. Line a baking sheet with parchment paper and draw an 8-inch circle as a guide. In a clean bowl, beat egg whites to soft peaks. Gradually add superfine sugar, beating to stiff and glossy peaks. Beat in vinegar, cornstarch, and vanilla extract.
- Pile meringue onto the marked circle, shaping a nest with raised edges. Bake for 1 hour 15 minutes. Turn off oven, leave pavlova inside with door ajar, and cool for 1 hour.
- Whip heavy cream with powdered sugar and vanilla extract to soft peaks. Gently transfer pavlova to a serving platter. Top with whipped cream and arrange fresh berries and sliced kiwi or passion fruit pulp.
- Combine flour, powdered sugar, and salt in a bowl. Cut in cold butter until mixture resembles coarse crumbs. Add egg yolk and ice water, mixing just until dough forms. Press dough into a 9-inch tart pan and chill for 30 minutes.
- Preheat oven to 350°F. Prick crust with a fork, line with parchment, and fill with pie weights. Bake for 15 minutes. Remove weights and parchment, bake for another 10 minutes, until golden. Allow to cool slightly.
- Whisk granulated sugar, eggs, and egg yolks in a saucepan. Stir in lemon juice and zest. Cook over medium heat, stirring constantly, until mixture thickens, about 5 to 7 minutes. Remove from heat and whisk in cubed butter until smooth.
- Pour warm filling into baked crust. Chill for at least 2 hours until filling is set. Slice and serve for a tangy-sweet finish.
